Crunch in the boules de poilus, small crispy biscuits with subtle notes of orange blossom and carefully roasted and crushed hazelnuts! These biscuits were made by the soldiers’ families from northern France during the First World War. They improved the poilus’ ordinary ones on the front line, who could keep them for a long time, sheltered in a tin can.
